Lisa: Eat Your Greens
At the risk of sounding like somebody’s Mother, my food thought for the day is: eat your greens. Green leafy vegetables are among the most nutrient-dense of all plant foods. Kale, swiss chard, spinach, arugula, beet greens, collards and lettuce are delicious and filling. They are high in vitamins, minerals and photonutrients. Greens are high in chlorophyll which cleanses and oxygenates the blood. In a raw state, leafy greens are high in enzymes which promote the regeneration of our cells. Leafy greens are also highly alkaline-forming which helps to offset the effects of stress.
To reap the most health benefits, eat greens every day; have a big, green salad, add some leaves to your juice, pile them on a sandwich or wrap, and gently steam or stir-fry some for dinner.
